Description

A sparkling rosé cider made from McIntosh apples and raspberries. It combines the freshness of cider with the indulgence of red fruit, in a delicate balance between crisp apple and juicy raspberry.

Low in sugar and full of finesse, it offers a lively, fruity and refreshing palate, carried by fine bubbles and a lovely lightness.

The nose is expressive, marked by aromas of fresh apple and raspberry.

On the palate, the whole is lively and harmonious. The raspberry brings a lightly tangy fruity touch, while the apple gives it structure. The finish is fresh, light and thirst-quenching.

Pairings and serving

This cider is ideal as an aperitif or for moments spent sharing.

It goes well with appetizers, tapas and a variety of simple, satisfying dishes. It also works very well at brunch or on the terrace.

Description

An ice cider made from Spartan, Empire and Liberty apples, naturally concentrated by Québec’s winter cold. It expresses great aromatic richness, marked by notes of candied apple, apricot, marmalade and sweet spices.

Its unctuous texture and natural concentration give it a remarkable intensity, while retaining a lovely freshness that balances the sweetness.

Tasting notes

The nose is rich and expressive, dominated by candied apple, cooked fruit and notes of sweet spices.

On the palate, the texture is ample and silky. Flavours of apple, apricot and marmalade stretch out at length, supported by touches of barley sugar and nuts. The finish is long, vibrant and perfectly balanced.

Pairings and serving

This ice cider is enjoyed on its own, at the beginning or end of a meal.

It pairs very well with foie gras, terrines, bold cheeses, fruit desserts and dark chocolate. It makes an elegant alternative to sweet wines and late harvest wines.

Description

A dessert cider made from McIntosh, Empire and Spartan apples. Born of Québec’s cold climate, it develops indulgent aromas of apple compote, pear and pineapple.

Lighter and more fluid than an ice cider, it offers a lovely balance between natural sweetness and freshness, giving it great versatility and an approachable texture.

Tasting notes

The nose is fruity and expressive, dominated by baked apple, pear and notes of pineapple.

On the palate, the texture is supple and slightly syrupy, yet always carried by a freshness that lightens the whole. The flavours are clean, indulgent and balanced, with a soft, harmonious finish.

Pairings and serving

This cider can be enjoyed on its own, as an aperitif or alongside desserts.

It pairs well with foie gras, terrines, cheeses, fresh fruit and chocolate. It also goes very well with spicy or fragrant dishes from Asian or Indian cuisine.

Description

An aperitif cider aged 10 years in tank, made from a blend of strong cider, ice cider and neutral alcohol. This long ageing allows it to develop great aromatic complexity while retaining a lovely finesse.

It reveals notes of fresh fig, prune, walnut and sweet spices, supported by a silky, slightly mellow texture. The whole is rich, balanced and surprisingly fresh on the finish.

The nose is complex and evolving, marked by aromas of dried fruit, fig and prune, accompanied by notes of sweet spices and caramel.

On the palate, the texture is ample and silky. Flavours of candied apple, walnut and dried fruit settle in gradually, supported by a soft structure and a lovely freshness on the finish.

Pairings and serving

This cider is enjoyed on its own, as an aperitif or at the end of a meal.

It pairs very well with cheeses, nuts, candied fruit and desserts made with spices or caramel. It also works very well with more indulgent pairings such as spiced cakes or sweet-and-savoury snacks.
