Description

A fortified red wine made from the Frontenac Noir grape, offering a warm and ample palate. It unfolds aromas of lightly cooked red and black fruits, blending plum, cherry, stewed strawberry, blackcurrant and fig.

Its aromatic richness is supported by a discreet touch of toasted oak, which brings depth and structure. Despite its generosity, the wine retains a lovely suppleness and a surprising drinkability for a wine of this style.

Tasting notes

The nose is intense and indulgent, dominated by cooked and jammy fruit. On the palate, the texture is enveloping, with a lovely amplitude and a marked persistence.

Flavours of black and red fruits linger at length, carried by a light woody note and a warm, perfectly balanced finish.

Pairings and serving

This wine is at its best at the end of a meal. It pairs particularly well with flavourful cheeses, dark chocolate and desserts made with nuts, candied fruit or vanilla.

Description

Patiently aged for 6 years, this fortified red wine reveals an ample, warm and perfectly integrated palate. It develops deep aromas of caramel, dried fig, walnut and roasted notes.

Its velvety texture and aromatic complexity recall great aged Port-style wines. Despite its richness, the whole remains balanced and surprisingly easy to drink.

Tasting notes

The nose is rich and evolving, dominated by notes of caramel, dried fruit and nuts. With aeration, roasted nuances and sweet spices round out the aromatic profile.

On the palate, the texture is silky and enveloping. The aromatic depth stretches out at length, supported by woody, lightly spiced notes that extend the finish with elegance.

Pairings and serving

This wine is meant to be savoured slowly, ideally as a digestif, to bring a meal to a gentle close.

It pairs particularly well with dark chocolate, aged cheeses and desserts made with dried or caramelized fruit.

Pairing ideas: dark chocolate squares with walnuts, blue cheeses or aged cheddar, fig tart, dates stuffed with mascarpone.

Serve slightly chilled, between 14 and 16 °C.

A complex and aromatic sweet wine, made from 100% Vidal. Produced from grapes harvested at overripeness, it develops a rich, luminous palette blending notes of honey, dried fruit, pear, apricot and lychee.

Its natural sweetness is balanced by a lovely freshness, which brings tension and elegance to the palate. The whole is generous, precise and persistent.

The nose is expressive and indulgent, dominated by aromas of honey, candied fruit and tropical fruit.

On the palate, the texture is unctuous without being heavy. Flavours of pear, apricot and lychee stretch out at length, supported by a freshness that structures the whole. The finish is long, delicately sweet and balanced.

Pairings and serving

This wine can be enjoyed on its own, as an aperitif or at the end of a meal.

It pairs very well with pâtés and terrines, foie gras, cheeses, fresh fruit and chocolate desserts. It also creates interesting contrasting pairings with spicy dishes.

Pairing ideas: blue cheese and pink peppercorn crêpe, spicy sushi, cooked-curd cheeses, ginger and jasmine ice cream, lemon tart.

Description

A flavoured sparkling white wine, made from Frontenac Blanc and fresh macerated watermelon. It combines the lightness of a sparkling white wine with the naturally juicy sweetness of watermelon.

On the palate, the whole is clean, thirst-quenching and balanced, with clearly present watermelon flavours and no excess sweetness. The fine bubbles add a lively, festive touch.

White wine
flavoured
with pawpaw

Description

The first pawpaw-flavoured white wine, made from the Vidal grape and a maceration of this rare ancestral fruit. The pawpaw brings tropical aromas reminiscent of mango, banana and pineapple, which intertwine with the natural, floral freshness of the base wine.

On the palate, the whole is silky, exotic and surprisingly balanced. The liveliness of the Vidal supports the richness of the fruit, avoiding any heaviness and leaving room for a sensation that is at once round and luminous.

Tasting notes

The nose is marked by clean tropical notes, dominated by mango, pineapple and white-fleshed fruit. There are also nuances of citrus and white flowers.

The palate is ample and textured, with an impression of natural sweetness carried by the texture of the pawpaw. The balance between roundness and freshness creates a harmonious, vibrant and original wine, with a long, delicately fruity finish.

Pairings and serving

This wine can be enjoyed on its own or at the table, where it pairs particularly well with fish, seafood and boldly seasoned white meats.

It also goes very well with spicy or sweet-and-savoury dishes, such as Asian or Caribbean cuisine.
